Chocolate Pumpkin Butter Cups

A deliciously rich and seasonal treat that combines the flavors of chocolate and pumpkin for a perfect fall snack.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips

Instructions

  1. In a bowl, mix together pumpkin puree, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  2. Melt the dark chocolate chips in a microwave or double boiler until smooth.
  3. Line a muffin tin with cupcake liners.
  4. Pour a small amount of melted chocolate into the bottom of each liner and spread it evenly.
  5. Refrigerate for about 10 minutes to set the chocolate.
  6. Once set, add a spoonful of the pumpkin mixture on top of the chocolate layer.
  7. Cover the pumpkin layer with more melted chocolate until fully covered.
  8. Refrigerate again for about 30 minutes until fully set.
  9. Remove from the muffin tin and enjoy your Chocolate Pumpkin Butter Cups!
