A hearty burrito filled with grilled chicken, zesty chipotle seasoning, and fresh vegetables, perfect for a quick weeknight dinner.

  • 2 chicken breasts
  • 1 tablespoon chipotle seasoning
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup lettuce, chopped
  • 1/2 cup corn
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Season the chicken breasts with chipotle seasoning, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until cooked through.
  4. Remove from the grill and let it rest for a few minutes, then slice into strips.
  5. To assemble, place a tortilla on a flat surface.
  6. Layer with rice, black beans, grilled chicken, diced tomatoes, lettuce, corn, and drizzle with chipotle ranch dressing.
