Chicken Soup

A warm and comforting chicken soup recipe that is both nutritious and delicious.

Ingredients

  • 1 whole chicken (about 34 pounds)
  • 8 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • 1 cup of egg noodles (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the whole chicken and water. Bring to a boil over medium-high heat.
  2. Add the chopped carrots, celery, onion, garlic, salt, pepper, bay leaf, and thyme to the pot.
  3. Reduce the heat to low and let it simmer for about 1.5 hours, or until the chicken is cooked through.
  4. Remove the chicken from the pot and let it cool. Once cool, shred the meat and discard the bones and skin.
  5. If using, add the egg noodles to the pot and cook according to package instructions.
  6. Return the shredded chicken to the pot and stir to combine.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, you can roast the chicken before adding it to the pot.
  • This soup can be stored in the refrigerator for up to 3 days.
  • Feel free to add other vegetables like peas or corn for extra nutrition.
