- 1 whole chicken (about 3–4 pounds)
- 8 cups of water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 bay leaf
- 1 teaspoon of dried thyme
- 1 cup of egg noodles (optional)
- Fresh parsley for garnish
- In a large pot, combine the whole chicken and water. Bring to a boil over medium-high heat.
- Add the chopped carrots, celery, onion, garlic, salt, pepper, bay leaf, and thyme to the pot.
- Reduce the heat to low and let it simmer for about 1.5 hours, or until the chicken is cooked through.
- Remove the chicken from the pot and let it cool. Once cool, shred the meat and discard the bones and skin.
- If using, add the egg noodles to the pot and cook according to package instructions.
- Return the shredded chicken to the pot and stir to combine.
- Serve hot, garnished with fresh parsley.

- For a richer flavor, you can roast the chicken before adding it to the pot.
