A gluten-free version of the classic Chicken Piccata, featuring a tangy lemon sauce and capers that brings a burst of Italian flavor to your dinner table.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour (certified gluten-free)
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup chicken broth
  • 1/2 cup fresh lemon juice
  • 1/4 cup capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season chicken with salt and pepper, then dredge in flour.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  3. Cook the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  4. Add chicken broth, lemon juice, and capers to the same skillet, bringing the mixture to a boil.
  5. Return the chicken to the skillet and simmer for 5 minutes.
  6. Remove chicken and whisk in the remaining butter until melted.
  7. Serve the chicken topped with sauce and parsley.
