A delicious and gluten-free twist on the classic Chicken Parmesan, combining tender chicken, gooey cheese, and rich marinara.

  • 2 pounds Boneless, Skinless Chicken Breast
  • 24-28 ounces Marinara Sauce
  • 2 cups Part-Skim Mozzarella Cheese
  • ½ cup Parmesan Cheese
  • 1 ½ cups Cottage Cheese (Low-Fat or Fat-Free)
  • 1 large Egg
  • 2 teaspoons Italian Seasoning Blend
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ cup Breadcrumbs
  • 1 tablespoon Olive Oil

Instructions

  1. Cut the chicken into 1-inch cubes.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken cubes with salt, pepper, and ½ teaspoon of Italian seasoning. Cook until browned on all sides (5-7 minutes) or alternatively, poach or bake until cooked through.
  4. Combine 1 ½ cups cottage cheese, 1 egg, ½ teaspoon Italian seasoning, ½ teaspoon garlic powder, and ½ teaspoon onion powder in a medium bowl. Stir until combined.
  5. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with olive oil.
  6. Pour 1 cup marinara sauce into the bottom of the dish. Spread evenly.
  7. Distribute the cooked chicken over the marinara sauce.
  8. Spoon dollops of the cottage cheese mixture over the chicken and spread out.
  9. Sprinkle 1 cup mozzarella cheese and ¼ cup Parmesan cheese over the cottage cheese.
  10. Pour another 1 cup marinara sauce over the cheese layers.
  11. Combine breadcrumbs with 1 tablespoon olive oil and a dash of Italian seasoning; sprinkle over the top.
  12. Finish with the remaining 1 cup mozzarella and ¼ cup Parmesan cheese.
  13. Cover with aluminum foil and bake for 25 minutes.
  14. Remove foil and bake for an additional 15-20 minutes until cheese is melted and bubbly, and breadcrumbs are golden.
  15. Let the casserole rest for 10-15 minutes before serving.
