A rich and flavorful one-pot chicken dish inspired by Italian culinary traditions, perfect for gluten-free dining.

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomatoes, diced (or 1 can of diced tomatoes)
  • 1 cup chicken stock
  • 1/2 cup white wine
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup mushrooms, sliced
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add the chicken pieces and brown on all sides.
  3. Remove the chicken and set aside.
  4. Add the onion and garlic to the same pot; sauté until softened.
  5. Stir in the tomatoes, chicken stock, wine, thyme, basil, salt, and pepper.
  6. Bring to a simmer.
  7. Return the chicken to the pot, cover, and cook for about 30-40 minutes, or until the chicken is cooked through.
  8. Add the mushrooms in the last 10 minutes of cooking.
  9. Garnish with fresh parsley before serving.
