Chicken Gnocchi Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1 package (16 ounces) gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chicken breasts and cook until browned on both sides. Remove and set aside.
  3. In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
  4. Stir in thyme and rosemary, then add chicken broth.
  5. Return the chicken to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Add gnocchi and cook according to package instructions.
  8. Stir in spinach and heavy cream, cooking until spinach is wilted.
  9. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • Gnocchi can be replaced with pasta if preferred.
