- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups chicken broth
- 1 package (16 ounces) gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add the chicken breasts and cook until browned on both sides. Remove and set aside.
- In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
- Stir in thyme and rosemary, then add chicken broth.
- Return the chicken to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Add gnocchi and cook according to package instructions.
- Stir in spinach and heavy cream, cooking until spinach is wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- Gnocchi can be replaced with pasta if preferred.
