A cozy, comforting recipe for any season that combines tender chicken, fluffy gnocchi, and a creamy broth.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery; sauté until softened.
  3. Stir in thyme and rosemary, cooking for another minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the shredded chicken and gnocchi; cook until gnocchi float to the top.
  6. Stir in the heavy cream and spinach; cook until spinach wilts.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • Gnocchi can be replaced with pasta if preferred.
