A vibrant and satisfying gluten-free salad combining tender chicken, crunchy vegetables, and a creamy peanut dressing.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups crispy rice cereal
  • 1 cup mixed fresh vegetables (e.g., bell peppers, carrots, cucumber)
  • 1/4 cup peanuts, chopped
  • 1/2 cup creamy peanut butter
  • 1/4 cup gluten-free soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Combine in a large bowl the shredded chicken, crispy rice, and mixed vegetables.
  2. Whisk together in a separate bowl the peanut butter, soy sauce, rice vinegar, honey, sesame oil, salt, and pepper until smooth.
  3. Pour the peanut dressing over the chicken mixture and toss until well coated.
  4. Top with chopped peanuts before serving.
  5. Enjoy immediately or store in the fridge for meal prep!
