A comforting Chicken Broccoli Rice Casserole that combines tender chicken, nutritious broccoli, and hearty rice in a creamy sauce.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked rice
  • 2 cups broccoli florets (fresh or frozen, lightly steamed)
  • 1 can (10.5 oz) condensed cream of chicken or mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup breadcrumbs (optional)
  • 1 tablespoon melted butter (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch (23×33 cm) baking dish.
  3. In a large bowl, combine cooked chicken, rice, broccoli, condensed soup, milk, 1 cup of cheese, salt, pepper, and garlic powder. Mix well.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle remaining cheese over the top. If using, mix breadcrumbs with melted butter and sprinkle on top.
  6. Bake for 30–35 minutes, until hot and bubbly.
  7. Let cool slightly before serving.

Notes

For quicker preparation, use leftover rotisserie chicken. Can substitute brown rice or add other vegetables as desired.
