  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and pumpkin puree until well combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Drop spoonfuls of dough onto a greased baking sheet.
  7. Bake for 12-15 minutes or until edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Use pure pumpkin puree and fresh spices for the best flavor. Chill the dough for 30 minutes to enhance flavors.
