Delightful muffins combining tart cherries and rich chocolate, topped with a sweet cherry glaze.

  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup maraschino cherries, drained and chopped
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon cherry juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  3. Combine melted butter, egg, milk, and vanilla extract in another bowl. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in chocolate chips and chopped cherries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Mix powdered sugar, milk, and cherry juice in a bowl until smooth for the glaze.
  8. Drizzle the pink glaze over the muffins once they cool, and then serve.
