  • 2 cups vegetable broth
  • 1 cup broccoli florets
  • 1 cup bell peppers, diced
  • 1 cup zucchini, diced
  • 1 cup shredded cheese (cheddar or mozzarella)

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the quinoa under cold water and drain.
  3. In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix cooked quinoa, broccoli, bell peppers, zucchini, cheese, milk, garlic powder, onion powder, salt, and pepper.
