Ingredients

1 cup quinoa
2 cups vegetable broth
1 cup broccoli florets
1 cup bell peppers, diced
1 cup zucchini, diced
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup milk (or plant-based milk)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Rinse the quinoa under cold water and drain.
In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
In a large mixing bowl, combine cooked quinoa, broccoli, bell peppers, zucchini, half of the cheese, milk, garlic powder, onion powder, salt, and pepper.
Transfer the mixture to a greased baking dish and top with the remaining cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
Notes
Feel free to add any other vegetables you have on hand.
This dish can be made ahead of time and stored in the refrigerator.
For a vegan version, use plant-based cheese and milk.
