A delicious and creamy gratin made with butternut squash, herbs, and a crispy panko topping.

  • 2 cups butternut squash, peeled and cubed
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Gruyère)
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons fresh herbs (thyme, rosemary, or sage)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the butternut squash until tender, about 10-15 minutes.
  3. Drain the squash and return it to the pot.
  4. Add the heavy cream, shredded cheese, and herbs to the squash, mixing until well combined.
  5. Season with salt and pepper to taste.
  6. Transfer the mixture to a greased baking dish.
  7. In a small bowl, mix the panko breadcrumbs with olive oil and sprinkle over the top of the gratin.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
  9. Let it cool slightly before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Feel free to mix different cheeses for added flavor.
