A delightful recipe for cheese blintzes, featuring thin crepes filled with a sweet cheese mixture, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese
  • 1/4 cup sugar (for filling)
  • 1 teaspoon vanilla extract
  • Butter (for frying)

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little butter.
  3. Pour a small amount of batter into the skillet, swirling to coat the bottom evenly.
  4. Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute.
  5. Remove the crepe and repeat with the remaining batter.
  6. In another bowl, mix ricotta cheese, cream cheese, sugar, and vanilla extract until well combined.
  7. Place a spoonful of the cheese mixture onto each crepe and fold it over to enclose the filling.
  8. In the same skillet, add more butter and fry the filled blintzes until golden brown on both sides.
  9. Serve warm, optionally topped with fruit or syrup.

Notes

  • For a sweeter filling, adjust the sugar to taste.
  • These can be made ahead and frozen, then reheated in a skillet.
  • Serve with sour cream or fruit preserves for added flavor.
