  • 4 cups gluten-free all-purpose flour (plus extra for dusting)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup fresh chives, finely chopped
  • 1 ¾ cups buttermilk
  • 4 tbsp unsalted butter, cold & cubed
  • ½ tsp garlic powder (optional)
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Whisk together flour, baking soda, salt, garlic powder, and pepper in a large bowl.
  4. Stir in cheddar and chives until well combined.
  5. Cut in butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  6. Add buttermilk gradually and stir until a sticky dough forms.
  7. Shape the dough into a round loaf and score an ‘X’ on top with a sharp knife.
  8. Place on the baking sheet.
  9. Bake for 35-40 minutes, or until golden brown and hollow-sounding when tapped.
  10. Cool for 10 minutes before slicing. Serve warm.
