  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a bowl.
  3. Cream the butter, brown sugar, and granulated sugar until fluffy in another bowl.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the grated carrots and nuts if using.
  7. Drop tablespoon-sized amounts of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Cool the cookies completely.
  10. Beat the cream cheese, powdered sugar, and vanilla extract until smooth for the frosting.
  11. Spread the frosting on the cooled cookies and enjoy!
