  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda

  • 1 1/2 cups mashed bananas (about 3-4 medium bananas)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground all spice
  • 1 cup shredded carrots
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 3/4 tsp ground cinnamon (for frosting)
  • 1/2 cup crushed pecans (for garnish)
  • 1/4 cup shredded carrots (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or non-stick spray.
  3. Cream together the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Whisk together the all-purpose flour, baking soda, and salt in another bowl.
  6. Mix the dry ingredients into the wet mixture until just combined.
  7. Fold in the mashed bananas, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, ground all spice, and shredded carrots.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth. Gradually add in the powdered sugar, vanilla extract, and ground cinnamon until well combined.
  12. Spread the cream cheese frosting generously on top of the completely cooled bread.
  13. Sprinkle with crushed pecans and additional shredded carrots for garnish.
