Delightful gluten-free bars combining caramel, chocolate, and oats for a sweet treat.

Ingredients

  • 1 cup all-purpose gluten-free flour
  • 1 cup old-fashioned rolled oats
  • ¾ cup packed light brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 12 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 36 caramels (unwrapped)
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper or aluminum foil.
  2. Mix flour, oats, brown sugar, baking soda, and salt in a medium bowl.
  3. Add melted butter and vanilla; combine well.
  4. Press more than half of the mixture into the prepared pan.
  5. Bake for about 10 minutes until lightly golden.
  6. Melt unwrapped caramels with heavy cream in a microwave-safe bowl in intervals until smooth.
  7. Remove the base layer from the oven and sprinkle chocolate chips evenly over it.
  8. Pour the caramel sauce on top of the chocolate chips.
  9. Sprinkle the remaining oat mixture over the caramel layer.
  10. Bake for another 15-20 minutes until golden brown.
  11. Allow to cool completely before cutting into squares.
