  • 12 oz Gluten-free Pasta
  • 2 medium Onions, thinly sliced
  • 3 tablespoons Chili Oil
  • 1 cup Cream (or coconut cream for dairy-free)
  • 3 cloves Garlic, minced
  • Salt and pepper to taste
  • Olive oil (for cooking onions)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta water.
  3. Slice the onions thinly for even caramelization.
  4. Heat a large skillet over medium heat and add a tablespoon of olive oil.
  5. Add the sliced onions to the skillet and stir to coat in the oil.
  6. Cook the onions for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
  7. Stir in the minced garlic and cook for an additional minute until fragrant.
  8. Pour in the cream and add chili oil. Mix well to combine and bring to a gentle simmer.
  9. Gradually add a bit of reserved pasta water to loosen the sauce to your desired consistency.
  10. Fold the cooked pasta into the sauce and toss until evenly coated.
  11. Season with salt and pepper to taste and serve immediately.
