A vibrant and gluten-free twist on the classic Caprese salad, combining pasta with fresh tomatoes, mozzarella, and basil.

  • 8 oz gluten-free pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved
  • 1/2 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. Drain the pasta and cool it under running water until it’s at room temperature.
  3. Combine the cooled pasta, cherry tomatoes, mozzarella balls, and basil in a large bowl.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Toss gently to combine all ingredients.
  6. Season with salt and pepper to taste.
  7. Serve chilled or at room temperature.
