Ingredients

  • 1 cup honey
  • 1 cup sugar
  • 1 cup butter, softened
  • 1 cup all-purpose gluten-free flour
  • 4 large eggs
  • 1/2 cup milk
  • Zest of 1 orange
  • Juice of 1 orange
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the cream: 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. Cook honey in a saucepan over medium heat until it turns dark and fragrant; allow it to cool slightly.
  3. Cream together sugar and butter in a large bowl until light and fluffy.
  4. Beat in eggs one at a time, then mix in the cooled burnt honey, orange zest, and orange juice.
  5. Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to the honey mixture alternately with milk, starting and ending with flour.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Whip heavy cream with sugar and vanilla until stiff peaks form for the cream.
  8. Serve slices of the cake with a dollop of burnt honey cream on top once the cake is cool.
