A delicious and easy-to-make pasta dish featuring chicken and fresh bruschetta toppings.

  • 2 chicken breasts, cooked and diced
  • 2 cups cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large bowl, combine the diced chicken, cherry tomatoes, basil, and garlic.
  3. In a separate bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
  4. Pour the dressing over the chicken and tomato mixture and toss to combine.
  5. Add the cooked pasta to the mixture and toss until well combined.
  6. Serve warm, topped with grated Parmesan cheese.
