Ingredients

  • 1 cup cooked brown rice
  • 1/2 cup black beans, rinsed and drained
  • 2 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced tomatoes
  • 1/4 avocado, sliced
  • 1/4 cup shredded cheese
  • 2 tablespoons salsa
  • Salt and pepper to taste

Instructions

  1. In a bowl, layer the cooked brown rice as the base.
  2. Add the black beans on top of the rice.
  3. In a skillet, scramble the eggs with diced bell peppers and season with salt and pepper.
  4. Once cooked, add the scrambled eggs to the bowl.
  5. Top with diced tomatoes, avocado slices, and shredded cheese.
  6. Finish with a dollop of salsa on top.
