Ingredients

  • 1 cup tapioca flour
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1 cup grated Parmesan cheese
  • 2 large eggs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine the milk, vegetable oil, and salt. Heat until just boiling.
  3. Remove from heat and stir in the tapioca flour until well combined.
  4. Let the mixture cool for a few minutes, then add the eggs one at a time, mixing well after each addition.
  5. Stir in the grated Parmesan cheese until evenly distributed.
  6. Grease a mini muffin tin and fill each cup with the batter.
  7. Bake for 15-20 minutes or until the tops are golden brown.
  8. Allow to cool slightly before serving.
