A comforting and creamy Boursin Orzo Bake featuring chicken and fresh vegetables, perfect for gluten-free diets.

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a large oven-safe skillet or baking dish.
  3. Add chicken, season with salt and pepper, and cook until browned. Remove chicken and set aside.
  4. Add garlic to the same pan and toast for 30 seconds.
  5. Stir in orzo and toast for 1 minute.
  6. Add chicken broth and bring to a simmer.
  7. Stir in zucchini and cherry tomatoes, then nestle in Boursin cheese in the center.
  8. Return chicken to the dish and mix slightly.
  9. Cover with foil and bake for 20 minutes.
  10. Uncover, stir in spinach and Parmesan (if using), then bake uncovered for another 5–10 minutes until creamy and orzo is tender.
  11. Garnish with fresh herbs and serve hot.
