  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Beat together the butter, cream cheese, and sugar in a large bowl until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk until just combined.
  7. Fold in the blueberries gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
