Delight in gluten-free croissants filled with whipped cream, mascarpone, and fresh berries, perfect for any occasion.

Ingredients

  • 4 large croissants (day-old or fresh)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone or cream cheese (softened)
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries, or blackberries)
  • Extra powdered sugar for dusting (optional)
  • Fresh mint for garnish (optional)

Instructions

  1. Carefully slice each croissant in half lengthwise, leaving a small hinge so that the halves remain attached.
  2. Whip the heavy cream with powdered sugar and vanilla extract in a mixing bowl until soft peaks form.
  3. Beat the softened mascarpone or cream cheese until smooth in a separate bowl.
  4. Fold the whipped cream into the mascarpone mixture until fully combined.
  5. Spread a generous amount of the cream mixture onto the bottom half of each croissant and top with fresh berries.
  6. Close the croissants, dust with powdered sugar, and garnish with fresh mint leaves if desired.
  7. Serve immediately or refrigerate for up to 2 hours before serving. Optional: drizzle with honey or melted white chocolate.
