  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk (or any milk of choice)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, applesauce, almond milk, baking powder, vanilla extract, cinnamon, and salt to the mashed bananas. Mix until well combined.
  4. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

  • Feel free to add nuts or dried fruits for extra flavor and texture.
