- 2 ripe bananas
- 2 cups rolled oats
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk (or any milk of choice)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, applesauce, almond milk, baking powder, vanilla extract, cinnamon, and salt to the mashed bananas. Mix until well combined.
- Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
