- 2 medium sweet potatoes, peeled and cubed
- 1 medium zucchini, grated
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
- Preheat the oven to 400°F (200°C).
- Boil the sweet potatoes in a pot of water until tender, about 15 minutes.
- Drain and mash the sweet potatoes in a bowl.
- Add the grated zucchini, breadcrumbs, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper to the mashed sweet potatoes. Mix well.
- Form the mixture into small tots and place them on a baking sheet lined with parchment paper.
- Spray the tots lightly with olive oil.
- Bake for 25-30 minutes or until golden brown, flipping halfway through.
- Let cool slightly before serving.
Notes
- For a vegan version, substitute the egg with a flax egg.
- These tots can be frozen before baking for a quick snack later.
