  • 200g feta cheese
  • 4 large eggs
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, add the cherry tomatoes and drizzle with olive oil.
  3. Place the feta cheese in the center of the dish.
  4. Season with salt and pepper.
  5. Bake in the oven for 20 minutes, until the tomatoes are blistered and the feta is soft.
  6. Remove from the oven and carefully crack the eggs over the tomatoes and feta.
  7. Return to the oven and bake for an additional 10-12 minutes, until the eggs are set to your liking.
  8. Remove from the oven, add fresh spinach, and garnish with basil if desired.
  9. Serve warm and enjoy!
