A delicious, gluten-free breakfast treat that combines creamy cottage cheese with sweet blueberries for a wholesome start to your day.

Ingredients

  • 1 egg
  • ½ teaspoon vanilla extract
  • ¼ cup blueberries (fresh or frozen)
  • 1 tablespoon almond flour (optional)
  • ½ teaspoon sweetener of choice (optional)
  • Pinch of cinnamon or lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine cottage cheese, egg, vanilla extract, and optional almond flour, sweetener, and cinnamon or lemon zest in a small bowl. Mix until smooth.
  3. Fold in blueberries gently, then pour the mixture into a ramekin or small oven-safe dish.
  4. Top with extra blueberries if desired.
  5. Bake for 25–28 minutes, until golden on top and just set in the center.
  6. Cool for 5 minutes and enjoy warm or chilled.
