Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in carrots and celery, cooking for about 5 minutes.
  4. Add shredded chicken, chicken broth, turmeric, and ginger; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in coconut milk, season with salt and pepper, and heat through.
  7. Serve hot, garnished with fresh parsley.
