  • 2 cups almond flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and line your baking sheet with parchment paper.
  2. In a bowl, beat the softened butter with the powdered sugar until it’s smooth and creamy.
  3. Stir in the vanilla extract until it’s all mixed up.
  4. Add the almond flour and salt; mix until there are no dry spots, but don’t overmix it.
  5. Form the dough into a ball and then flatten it into a disk shape, then wrap it in plastic and chill it for 10 minutes.
  6. Lightly flour a surface and roll out the dough to about 1/4 inch thickness.
  7. Use a cookie cutter or a knife to cut the dough into the shapes you want.
  8. Place the cookies evenly on the lined baking sheet with a little space between each cookie.
  9. Bake for 12 to 15 minutes until edges turn light golden.
  10. Let them cool on the baking sheet for a few minutes then transfer to a rack to cool completely. Enjoy!
