  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, maple syrup, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. If using, fold in the chocolate chips.
  6. Spread the batter evenly in the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Allow to cool before cutting into squares and serving.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For a richer flavor, add a pinch of espresso powder to the batter.
  • These brownies can be frozen for up to 3 months.
