  • 1/4 cup coconut oil or butter, melted
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. If desired, fold in chocolate chips or nuts.
  6. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for about 10-12 minutes or until the edges are golden.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For sugar substitutes, consider stevia, monk fruit, or allulose, but avoid honey or maple syrup.
