  • 2 cups almond flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, granulated sugar, and salt.
  3. In a separate bowl, whisk the egg whites until soft peaks form.
  4. Gently fold the egg whites into the almond flour mixture.
  5. Add vanilla and almond extracts, mixing until just combined.
  6. Drop spoonfuls of the batter onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow to cool before dusting with powdered sugar.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a variation, add chocolate chips or chopped nuts to the batter.
